Then choose the chocolate that carries it: our Imported Belgian Dark, or The Purist — our two-ingredient organic dark. Then choose your intensity: 45%, 55%, or 70%.
And a quiet promise behind every choice: the higher the cocoa, the lower the sugar. Chocolate should never come with guilt.

Every piece begins when your order arrives — tempered, filled, and finished by hand, for you alone. Products that wait months on a shelf survive on what's been added to them. Ours go from our kitchen to your hands while the craft is still fresh in them.

You will never find compound chocolate at Souvenoir. Not in a single piece. We work only with true couverture — chocolate rich in pure cocoa butter, nothing substituted. Couverture demands what compound never asks: tempering. Degrees matter. Chocolate taken two degrees too far loses its snap, its shine, its melt. Few kitchens attempt it, because few hands can hold it. Ours do — every batch, by hand.
The difference is the first thing you taste: a clean snap, a glass-like sheen, and a melt that dissolves at body temperature instead of coating your palate in wax.

Read the ingredients of any chocolate you own: five, six, seven names. Ours has two. Organic cocoa. Organic unrefined raw cane sugar. That is the entire label. No emulsifiers. No white sugar. No chemicals. Working couverture without an emulsifier is the hardest discipline in chocolate-making — remove the safety net, and only technique holds the chocolate together.
